What’s in our chicken benny?

The main ingredient that makes this dish unique is the sriracha hollandaise sauce. It’s similar to traditional hollandaise sauce, but it has a stronger taste thanks to the addition of sriracha. If you’re not a fan of spicy food, you can always mix in some lemon juice to tone down the heat.
Keep chicken juicy
Tender, juicy and crispy fried chicken needs care and practise. Here are some tips to make sure your chicken thigh is perfectly crispy:
1) Watch the oil temperature – hot oil should be between 170C and 190C.
2) Use tongs to turn the thighs over so they fry evenly.
3) Lift the chickens up with tongs and let them drain on paper towels before serving. The paper towels can act as a barrier to keep the excess oil from dripping away.
